The Earl of Sussex is pleased to introduce Henry Tavarez as the Head Chef for the restaurant. Chef Tavarez was born in the Dominican Republic and has been cooking professionally since the age of 14. After completing his formal training at Algonquin College, Henry began impressing diners at Ottawa hot spots such as The Rideau Club, Kinki, ParFyum, Mambo and the Chateau Cartier Hotel. Henry brings his culinary creativity, a passion for comfort food and a zest for spice to Earl of Sussex diners.


With so many options in the Byward Market area, having a great chef, an attractive interior and a fancy bar are not enough. At the Earl of Sussex we believe service is a key. We like to think of our bartenders, servers and management personal as attentive, and quick to respond to your orders. Our experienced wait staffs go to great lengths, not to intrude on your party yet to be responsive when you are ready for another “round”.
